With the start of the summer and our piles of farm fresh produce we've been getting we've been in need of new kale, collard and greens recipes. We had tried a recipe for kale and blue cheese rollups last summer and they were good, but needed a little extra. So I thought up this recipe, we tried it out tonight it was awesome! We are definitely making these again.

Recipe:
10 kale leaves
1 onion
3 cloves of garlic
1 tbs olive oil
1/3 cup blue cheese
1/3 cup ricotta cheese
2 tbs red wine vinegar
1 tsp salt
1/2 pack of filo dough

Chop kale, blanch in boiling water until tender, 3-5 min, drain and let cool. Chop onion, chop garlic. Preheat pan and add olive oil, add onions and cook until tender. Add garlic and cook for a few minutes. Turn off heat and add vinegar and salt. Let cool. Mix together chopped blue cheese, cooked onions and garlic and kale.

Prepare filo dough, put down a few layers of filo brushing each with melted butter. Spread out kale mixture onto filo dough. Add a few more layers of filo dough brushed with melted butter to the top, cut squares into the pie. Place in preheated 350 oven for 15-20 minutes, until golden brown and delicious!
