I'm also curious about your dough selection, it looks like the elusive tender flaky crust.

These were fried. Also the dough was interesting, it was flour, melted butter, vinegar, some water and salt. It was just mixed up and kneaded until smooth, no crazy pastry like going ons, but it was extrodinarly flaky after frying.
